Homemade Keto Ice Cream
The best thing about Keto, is that most sweet treats can be ketofied. Craving ice cream? No problem! Here is a super easy way to satisfy that sweet tooth.
-
2 1/2 c almond milk
-
1/2 c cream
-
1 cellulose or other sugar free sweetener, erythritol not recommended
-
1 package pudding, flavor of your choice
In a mixing bowl or blender, add all ingredients and combine. Chill in the fridge for at least 30 minutes. Once chilled, move liquid mix to your ice cream attachment bowl and churn for 30 minutes, or until smooth and creamy.
Tips: If it does not churn into ice cream, the ice cream bowl attachment is probably too warm. You can freeze the mixture in the attachment bowl and churn later. To churn it later, set out mixture to defrost at room temperature, until it is soft enough to mix by hand. You will probably need to mix it by hand at first to get the rotating attachment loosened up. Then churn for about 5 - 10 minutes to get the mixture creamy. Once it is frozen, churning is not absolutely necessary, but there will be ice crystals in it, and it will have the texture more like sorbet.
